We just returned home from a fun weekend in Virginia. I was somewhat uninterested in the trip because it was in a small town outside of Richmond, Virginia and I didn’t know of many things to do in Virginia aside from Virginia Beach.
We were going for a family reunion held in Glen Allen and it turned out to be the perfect setting for our family to reconnect face to face with one another. Seeing family members I hadn’t seen in a few years was so heartwarming. I was amazed to see that despite our different personalities, generations, and geographical distance, we came together as if we were all meant to be together.
The weekend got me to thinking about this fun Pineapple and Sweet Pepper salsa recipe that has a lot of different flavors, but comes together for a flavor reunion in your mouth.
The salsa is loaded with flavorful fruit and veggies. It’s the perfect blend of sweetness from the pineapple and peppers with the tartness of lemonade .
This salsa was the perfect way to top off the chicken soft tacos I made for dinner the week we got back from Virginia. The salsa is made using fresh veggies, fruit and lemonade.
I use Simply Lemonade® over other lemonades because of the homemade taste and all-natural ingredients. Simply Lemonade® has no artificial colors or flavors….just lemon juice, water, sugar and natural flavors.
To make this salsa, follow the instructions below, but don’t be afraid to tweak them to make the flavors suit your taste buds.
Pineapple and Sweet Pepper salsa
Prep Time: 10 minutes Yields: 5 servings
INGREDIENTS
- 3/4 cups of diced pineapple
- 3/4 cups of sweet peppers, seeded and minced
- 2 tablespoons of chopped fresh parsley
- 2 teaspoons of honey
- 1/4 cup of Simply Lemonade®
INSTRUCTIONS
1. Combine all ingredients in a large bowl, and mix well until blended.
2. Serve immediately.
I added a few spoonfuls to my habanero chicken soft taco. and it was so delicious.

I love a good salsa and this one seems like it has a great combination of flavors. Salsa with pineapple is very intriguing. We love the Simply Lemonade also. It goes great with this hot weather we are having.
