Who’s ready for some easy Italian meal inspiration?
Today I’m sharing this easy Italian recipe from this week’s dinner menu for three simple reasons.
First, my daughter gave me the most amazing compliment on this meal.
Second, it’s a “one-pot meal” meaning there is a little less clean-up after preparing it.
And third, two of the main ingredients used in this recipe are part of the “Make It Italian” promotion at Publix, valid now through 10/22/21.
Publix is one of my favorite stores to visit when it’s time to shop for the week’s groceries. They’re the first grocery store on my way to and from home, making the location super convenient. I truly enjoy walking the aisles and checking the Extra Savings flyer to see what new ingredients I can try in my kitchen.
This week I am trying two ingredients that I’ve never used before to make this Chicken Parmesan and Tortellini. To make it I used two 24-ounce jars of Mezzetta Artisan Ingredients Parmigiano Reggiano Marinara, one 20-ounce Buitoni Mixed Cheese Tortellini, freshly grated parmesan, cherry tomatoes, and boneless-skinless chicken breasts. I also used some fresh basil from my garden since the season is ending and I don’t want to waste them; I also used herbs I had in my pantry.

My favorite part of this dish is how flavorful it is and how much my family enjoyed it. The Mezzetta Artisan Ingredients Parmigiano Reggiano Marinara has so many delicious ingredients that I didn’t even have to do any extra seasoning except for what I put on the chicken.
Chicken Parmesan and Tortellini
The Chicken Parmesan and Tortellini starts with browning up some seasoned and cut boneless chicken breast in olive oil until it’s golden brown on all sides.
Once the chicken is cooked through, I remove it from the pan and rinse the pan. Next, I fill the pan with 4 quarts of water and a tablespoon full of salt. Once the water comes to a rolling boil, I add a tablespoon of olive oil and one 20-ounce package of Buitoni Mixed Cheese Tortellini. The Tortellini is a combination of Three Cheese Tortellini and Spinach Tortellini filled with fresh creamy ricotta, aged Parmesan, and Romano cheeses.
After cooking the Tortellini according to the instructions on the package, I strained them before returning the pasta and chicken to the pot. Then I added in 6 ounces of freshly grated parmesan cheese, ¼ cup of fresh basil, and two 24-ounce jars of Mezzetta Artisan Ingredients Parmigiano Reggiano Marinara.
The ingredients in the marinara include Plum Tomatoes From Italy’s San Marzano region, Extra Virgin Olive Oil, Cream, Fresh Onions, Imported Parmigiano Reggiano Cheese (Part- Skimmed Milk, Salt, Rennet), Parmesan Cheese (Part- Skimmed Milk, Cheese Cultures, Salt, Enzymes), Sea Salt, Fresh Garlic, Spices, Fresh Basil, Black Pepper, Xanthan Gum, and Citric Acid.
With ingredients like these, I encourage you to resist the urge to over-season the dish. The ingredients in the two main products I used have everything this meal needs.
Once the marinara comes to a simmer, add in ½ cup of halved cherry tomatoes and serve while hot. This is an easy-to-make Italian meal for a weeknight dinner or an elevated date night at home.
