Weekends have become so busy for our house lately and while I plan out my meals during the week, I don’t do so good on the weekends. I usually leave Saturday and Sunday blank on the menu so my husband and I can decide together, but we’ve been so busy lately that weekend meal planning has been neglected.
Most weekends we’re scrambling to figure out dinner last minute. On Saturday’s we are up early so we can hit the gym before breakfast. Then we’re back out the door to run errands. We pop back in the house for lunch and to change clothes, then out the door again to church. By the time we are heading home for dinner, we’re trying to decide what to eat. Most times we get take out or walk the aisles at the grocery store until we find something. That can be frustrating because, by that time, we’re starving and tired.
We needed to come up with some easy, last-minute meals solutions that could be made in 30-minutes or less. To keep the prep time low, we knew that would require a mix of fresh and frozen ingredients.
For the frozen ingredient, we used SeaPak® Jumbo Coconut Shrimp. SeaPak® has a variety of convenient seafood’s that are responsibly sourced so we didn’t feel guilty about using a semi-prepared food in this recipe.

Coconut Shrimp Tacos with Mango Salsa
Makes 6-8 tacos Prep: 15 minutes Cook Time: 2-3 minutes
Ingredients
- SeaPak® Jumbo Coconut Shrimp 18 oz.
- 1 mango diced
- 1/2 red onion diced
- 1 cup of spinach
- 1/2 cup of cilantro
- 1 diced red pepper
- 1 lime
- 8 small soft tortillas
Instructions
1. Dice the mango, red onion, and red pepper, then combine it in a bowl. Chop the cilantro, add it to the bowl and mix. Top with the juice of half a lime (optional). Cover and place in the refrigerator.
2. Cook the SeaPak® Jumbo Coconut Shrimp according to the package instructions. (2-3 minutes). Drain on a paper towel.
3. Fill each tortilla with a layer of spinach, a layer of salsa, then top with three SeaPak® Jumbo Coconut Shrimp.
I told you these were so quick and easy to make. The amazing thing is they are crunchy and layered with fresh flavors.

I used to live in Florida and this recipe reminds me of the coconut shrimp tacos I used to get by the beach. I never tried making them at home because I was intimidated by all the ingredients but your recipe makes it so much more approachable! Definitely going to try this recipe out next week!
