My backyard garden has been so fun to start and care for this year, however it has not produced what I’d hoped. I was expecting to pick fresh herbs and vegetables daily but things have grown slowly or not at all.
Still…I have enjoyed gardening this summer and the delicious ingredients my tiny bounty has supplied my kitchen.
Of everything I planted, my basil did the best. I planted it in the raised garden bed on my deck and it’s flourished week after week. I’ve made pestos and flavored Basil butters with it as well as used the leaves in other recipes.
My tomato plants which I just knew would do well, gave me only five tomato one of which was eaten by ants. The plants are still in the ground and I am hoping them yield some fruit over the next couple months.
I had a pretty good run with hot peppers too. I’ve only harvested a handful so far, but they’ve been extremely hot. One of the reasons I decided to grow them this year is because supermarket hot peppers are not consistently spicy. When I grow them myself they seem to always deliver the heat I’m looking for in my recipe.
In fact, I used the ingredient on the plate last night to create some last minute leftover steak carnitas and y’all….!
I diced everything up, sprinkled it with garlic powder and salt then added it onto of some leftover steak from the fridge. There was just under two ounces of steak left over from dinner a few days ago that I did not want to let go to waste. I sliced it and laid it in a small warm taco and made me some yummy street style tacos for dinner. I paired it with plantain and it was one of the most delicious meals of my week. No cap.
