One thing we love around here are pancakes. We are that pancakes and maple syrup on Saturday morning kind or family. I normally make them on my two eye stove top reversible griddle, but today I decided to make them in the oven using my Sweet Creations Whoopie Pie pan by Good Cook.
I love making pancakes for my family and normally whip up a batch for Saturday morning and an extra one for a quick breakfast later breakfast in the week.
My pancake recipe is very easy and you can add any kind of fruit to it you like or make them plain.
For this recipe I’m using strawberries from the freezer.
- 1 cup of flour
- 2 tsp. of baking powder
- 1/4 tsp. of salt
- 1 tbls. of sugar
- 3/4 cup of milk
- 2 tbls. of vegetable oil
- 1 egg
- 4-5 strawberries
- cooking spray
- Preheat the oven to 350 degrees F.
- Combine all of your liquid ingredients in a medium bowl.
- Slowly add in the dry ingredients making sure to mix well to avoid lumps.
- Cut 12 thin slices of strawberries.
Spray each of the Whoppie Pie cavities on the tray.
Slowly begin filling the Whoopie Pie cavities with pancake batter.
Now begin adding one sliced strawberry to the pancake batter in each Whoopie Pie cavity.
This is what each cavity should look like once your ready to put your Whoopie Pie pan into the oven.
Bake the Whoopie Pies in a preheated oven on for about 14 minutes.
After removing them from the oven, you can eat them immediately.
These are best served hot, drizzled with your favorite maple syrup.
If you plan to freeze them for later, let them cool before removing them from the pan, then store them in a freezer safe container.
Whoopie Pie Pancakes will stay fresh up to 6 months in the freezer.
