I’ve kicked off the new year by getting back to better eating habits and I’m still going strong. During the holidays I ate every sweet and savory thing I wanted, but once the first week of January rolled around I got back on track with meal planning. Prepping meals ahead has been my number one way to make sure I’m making conscious decisions about what I eat.

One of the easiest proteins for me to prep ahead is chicken. Roasted Garlic Chicken and Seasoned Rice Wine Vinegar Salad DressingI’m using them in this weeks meal prep as a marinade for my chicken and as a light stand alone salad dressing. Instead of marinating the chicken in a thick sauce with lots of additives than slathering the finished sale with creamy dressing I’m swapping those ingredients with NAKANO Rice Vinegars. I initially made this swap years ago and at first I had to get used to the different dressing texture and flavor. If this is your first time using NAKANO as a salad dressing, give yourself time to get used to the savory and light tangy flavors.

To help you kick off your meal planning for the week, here’s some inspiration from my kitchen.

1. Start by marinating one cubed chicken breast in 1/4 cup of Roasted Garlic NAKANO Seasoned Rice Vinegar, and a little salt to taste. Let the chicken marinate in the refrigerator for one hour up to overnight.

2. Drain the marinade and brown the chicken in a pan with one tablespoon of olive oil.

3. Allow the chicken to cool in the refrigerator while you chop your bell peppers.

4. Fill the bottom of a small container with 3 tablespoons of your favorite Seasoned NAKANO Rice Vinegar. Then layer in the chicken, peppers and field greens.

When you’re ready to eat the salad, just shake the container to coat the salad with NAKANO Rice Vinegar and enjoy. If you add a different flavor to each salad, every day you’ll have a different flavor experience. You can also turn this salad into a stir fry by sauteeing it in a pan.
