I was born and raised in New York City, and moved to the Carolina’s as an adult where I met my amazingly handsome husband.

While I often miss the glitz and glam of New York, there are some things about the Carolina’s that just can’t compare.

Every day from about October through January, I can step out my backdoor and enjoy some of the most amazing Fall scenery money can buy.

I love taking advantage of the seasonal changes in my backyard. This summer I brought in sand, laid out beach towels and set up a pool for beachy family stay cation. Now that the weather is cooling, I’m turning it into a glamping date-night getaway. 

My backyard provides an unbeatable glamping spot. Let me show you how I transformed it into a date night getaway.

My husband was so excited when I shared my plans for our glamorous date night oasis. It got us imagining future date nights under a canopy of fall leaves and night time stars. 

The first thing we mapped out was our menu. One thing that excites me about date night is preparing something fun to eat.

My husband, who’s from the south, loves to grill and me being a NewYorker I love pizza. We paired those two ideas and grilled a Freschetta Brick Oven® pizza and paired with a simple garlic butter dipping sauce. 

Since we were grilling on a charcoal grill, we wanted a pizza with quality ingredients, and 100% real cheese. Both the Freschetta® Naturally Rising pizza and Freschetta Brick Oven® pizza have those premium ingredients we look for. 

Grilled Freschetta Brick Oven® pizza


  • Preheat grill on high for at least 5 minutes.
  • Remove pizza from carton and clear overwrap film.
  • Place double layer aluminum foil large enough to cover the bottom of the pizza on center of grill.
  • Place pizza on foil in center of grill.
  • Turn grill to low and cook for 13 to 16 minutes with lid closed.
  • Let pizza stand 2 minutes before serving.

Garlic Butter Dipping Sauce 

  • 1 stick salted butter (room temperature)
  • 1/4 cup of minced garlic
  • 1/3 cup of Extra Virgin Olive Oil


Place extra virgin olive oil into a small sauce pan over low heat. Allow the garlic to gently simmer on low heat until opaque.

Pour over room temperature butter and stir. Serve in a small dish.

For dessert, we had S’more Dip and fresh fruit. I warmed the S’more dip right on the grill with the pizza and it turned out perfectly. 

S’more Dip recipe

  • 2 milk chocolate bars (chopped)
  • 2 tbs of milk
  • 1 1/2 cups mini marshmallows
  • Honey Maid Graham crackers for dipping


  • In a small casserole dish add chocolate, milk and 1 cup mini mallows. 
  • Preheat grill on high for at least 5 minutes.
  • Place dish on grill for 5 minutes then stir. Leave on heat for another 5 minutes and check to see if chocolate and marshmallows are fully melted. Stir again if not. If they are, add remaining marshmallows and heat for another 5 minutes until browned on top. 
  • Remove from heat. Let cool for 1 minute, dip your graham crackers and enjoy!!

Setting Up Our Glam Tent 

For the look and feel for our glam tent, we wanted it to be an extension of our indoor space.

We love neutrals, foliage and texture so of course we included these three elements in our date night tent.

The rugs and bedding set the mood. From the time we stepped into our tent it felt like we could have been cuddled up in our family room. By using our favorite patterned and textured indoor rugs we we’re able to make the space feel like home. 

For the bedding, we brought on more neutral color, and the look of foliage. To make the bed even more comfy, we added a mix of firm and extra fluffy pillows.

To create a focal point for our glam tent, we took a white bamboo sheet and created a valance flanked by small mirrors. The empty space under the valance was the perfect spot for extra pillows.

On either side of the bed, we placed woven tables with lots of textures. The tables are very important in our glam tent since the ground under the tent is uneven and not great for cups.

Just as we would do in my home, we added lamps, plants and small decor item to the space. 

At the foot of our bed, we placed a flat surface to set things like plates. When not in use, we decorate it with plants, and additional light sources.  

For our secondary lighting in the corners of the tent and above the bed, we used lanterns with flameless candles in them. Once the sun goes down, the lamps tend to be too bright, but the candle light from the lanterns is perfect.

    Just above the bed, we hung a Moroccan wedding blanket inspired wall hanging created by friend Corinna. She has a very easy Moroccan wedding blanket wall hanging tutorial if you’d like to make one. 

    No matter where we are in the tent, the views are stunning.
    Through the roof, above the bed, when the rain covering is off the tent, we have some of the most amazing views. When we’re out here all day, it’s so amazing to see the sky and tree line evolve with the changing sunlight. At night, the sky is even more beautiful. It feels so amazing being out here cuddled up with my husband under the sky.
    I was going to create a glam headboard for the bed, but once I saw the view behind our bed, I knew no headboard would have been as gorgeous as this tree line.

    I love being out here spending quality time with my husband and enjoying our backyard. I hope our experience has given you some ideas to create your own glamping space.
