My son is a high school senior this year and when I look at him I think,”Man, when did this kid grow into a mini adult?” That’s him in the red shirt with the red mouth guard. I started asking myself that around the time my son started playing high school Rugby last fall. He went from a slender teen to an athletic little man. After joining the team he started working out and really took pride in being part of this new brotherhood. He took pride in his team and we took pride in him.
With him being on the team, pre-game dinner and side line cheers quickly became part of our Friday night tradition. Making sure the family was fueled up before each game became something I looked forward to each week. On the days when I’d ask my son what he wanted to eat, he always wanted his fast food favorite, pizza and Mozzarella Stuffed Garlic Knots.
He’s not playing on the team this year, but he still loves playing Rugby in his free time and still enjoys pizza and Mozzarella Stuffed Garlic Knots. To pull this meal together in 30 minutes or less, I use pre-made dough for the garlic knots and Tony’s® Pizzeria Style Cheese Pizza. For my family of five I use two Tony’s® Pizzeria Style Cheese Pizza’s and make ten Mozzarella Stuffed Garlic Knots. The pizza and garlic knots take about the same time to cook and taste delicious together. The whole dinner takes about 30 minutes to make start to finish. It’s such a great recipe and perfect for game nights.
13 oz. can of pizza crust
3/4 pound mozzarella, shredded
2 tablespoons Parmesan & Romano cheese, grated
3 tablespoons salted butter
3 cloves garlic, minced
1/3 cup of fresh parsley, chopped
1. Preheat oven to 425 degrees.2. Unroll the pizza dough and cut into 10 equal portions. Press down the center of each pizza dough strip to create a well for the cheese.
3. Sprinkle some mozzarella cheese down the center length of each strip. To seal, pinch the edges together to form a mozzarella filled roll. Repeat the process with each strip and then mold each strip into a knot.
4. Bake the knots for 15 to 20 minutes or until golden brown.
5. Now combine the butter, garlic, parsley, Parmesan & Romano cheese in a pan and saute on medium high until the butter is melted.
6. Once the knots are done, toss in the pan mixture and serve while hot.
