Hey y’all when I tell you this job situation is wearing me out I mean it! I’m in month six of working a job in addition to building my brand and this schedule is not for the faint of heart. I seriously have had to reevaluate my decision dozens of times since September because only a lunatic would have attempted such a feat. But here I am! Six months in and I’m working about five hours a day at my job and five hours on my business. I must say, the decision has drastically sped up my financial goals, but it has definitely required some sacrifice. One area that has suffered has been meals and meal planning. We have been eating out like money grows on trees between my husband and I’s work schedule. If were not eating out we’re buying convenience meals to fill in empty spots on our menu. In fact, my lunch this week is all planned around LEAN CUISINE® Five Cheese Rigatoni. Y’all know how I feel about meat in every meal. When I saw the LEAN CUISINE Five Cheese Rigatoni I grabbed three for the week and some ingredients for a triple pepper salad. When you’re working your way toward being a vegetarian it can be challenging finding options so I knew I had to share this one. The salad I used for lunch this week is a bagged spring mix paired with sliced peppers and drizzled with Italian salad dressing. I added the sweet pepper for color, nutrition and flavor. These peppers have a delightful sweet flavor I love that goes well with the pungent salad greens. I heated the LEAN CUISINE Five Cheese Rigatoni per the box instructions and plated it to make me feel like I’d really put some work into making this lunch. I plated the rigatoni pasta, sweet tomato sauce topped with a five cheese blend on a plate just as if I’d cooked it myself. Each entree makes just enough to fill me up but still have room for my salad.
