Italian Meatballs

I promise you there’s so much good wrapped up in this bowl of pasta. The Italian Meatballs, were the superstar though, because the ingredients ensured they turned out tasting flavorful, light and savory.

There are so many delicious sensations going on here and you’ll see why when I tell you what’s in my Italian meatballs.

I confess, I was eating this as I was writing, all while trying not to get any pasta sauce on my winter white velour pants. The flavors were so good, I just kept going it, bite after bite.

I made these for dinner yesterday as part of this weeks menu plan. I am not a big time meat eater unless it’s cooked a certain way. For me to eat meat, the texture and flavor has to be right. I love these meatballs because I have both of those needs met in this dish.

Italian Meatballs

INGREDIENTS:

  • 1lb of ground turkey
  • 1/2 cup of mozzarella cheese
  • 1/2 cup of parmesan cheese
  • 1/4 cup of feta cheese
  • 1/2 cup of finely chopped kale or spinach
  • 1/4 cup of parsley 
  • 1/2 teaspoon of garlic powder
  • 1/2 cup of Italian bread crumb
  • 2 eggs
  • salt & pepper to taste
  • olive oil

    1. I place all of my ingredients into a large bowl and mix it by folding and smashing until all of the ingredients are pretty much evenly distributed.

    2. Then I heat about three tablespoons of olive oil a large skillet on medium to high until hot.

    3. While the skillet heats, I talk to my mom on speaker phone and roll small chunks of meat into balls. This time I made them medium size, but I usually make them bite size. I had to pick junior up from Rugby, I was short on time and didn’t feel like rolling 50 plus meatballs today. As I rolled each meat ball, I put in the hot pan.

    4. I browned my meatballs on all sides which is terrible hard when it’s a round object, but I didn’t pretty good.

    5. Finally, I added them to a bowl, atop a mountain of penne pasta and sauce. I don’t like my meat mixed in with my pasta. To me it makes the meat mushy rather than firm. If you don’t care, you can combine your meat and pasta into one pot. 

    I made 20 medium meatballs for the five of us and we had left overs for Germaine and I to eat for lunch.

    Anytime there are leftover, I call that a win in my house!!
