Italian Lasagna Rollups

In an effort to eat more meatless meals I made this delicious Italian Lasagna Rollup recipe using similar ingredients to my crockpot lasagna recipe.

It’s so easy to make and a great recipe for my kids to help me make. 

In fact, after making and cooling the noodles I could let my 13 and 11 year old assemble the rolls.

What You Need

  • 8-oz. pkg. of Ricotta Cheese
  • 2 eggs
  • 1 pkg.  (10 oz.) frozen chopped spinach, thawed, well drained or Fresh spinach
  • 1-1/4 cups Shredded Mozzarella Cheese, divided
  • 6  lasagna noodles, cooked
  • 2 cups  spaghetti sauce
  • salt (to taste)
HEAT oven to 375ºF.

Mix ricotta cheese, spinach, 1 cup mozzarella, a pinch of salt and eggs until well blended; spread onto cooked noodles. Roll up tightly.

PLACE, seam-sides down, in 9-inch square baking dish; top with sauce and (optional) remaining mozzarella.

BAKE 30 min. or until heated through.

Makes 6 servings
