Ingredients

  • small red cabbage
  • mango
  • 4-5 strawberries
  • red pepper
  • spinach
  • cilantro
  • carrots
  • broccoli

Instructions

1. Wash and cut all of the produce except the cilantro and spinach into bite size pieces.

Ingredients

  • 2 tablespoons Mango Pineapple Aquafina Sparkling
  • 3/4 lbs strawberries (leaves removed)
  • 2 tablespoons vinegar
  • 2 tablespoons olive oil
  • 1/4 cup raw sugar

Instructions

Place strawberries and Aquafina Sparkling in a blender and pulse until pureed. Aquafina Sparkling has 0 calories, 0 sugar, and 0 artificial flavors which makes it a light refreshing substitute for lemon juice in this recipe.

Add sugar and blend. Now gradually add the vinegar and oil until the vinaigrette thickens.

To create my Rainbow jar salad, I started with a layer of Strawberry Vinaigrette at the very bottom of the jar. Next, I layered in alternating colored produce from heaviest to lightest until I reached the top of the jar. This salad has a mix of natural colors and flavors. Each ingredient has at least a 7-day shelf life, making them perfect in this refreshing Rainbow jar salad.
