Cheesy mashed potatoes in the shape of a mound is my new favorite way to serve mashed potatoes. This method is especially helpful when I have family and friends over for a meal or even when I cooking for just my family.
This method of serving mashed potatoes makes portion control simpler and it makes it easier for younger kids to serve themselves without making a mess.
I stumbled across this idea one evening during the quarantine when all of my youngest adult children were living at home. I had just whipped up a large pot of mashed potatoes with cheese and wanted to make sure our kids didn’t eat all of the dinner before their father and I got a chance to make a plate. At the time, my oldest son who was into weight lifting, was on like a 3600 calorie meal plan and was eating a lot more food than I typically cooked. He was used to eating as much as he wanted while at college and using his unlimited meal plan, however that didn’t work when I was the one doing most of the family cooking.
So to ensure everyone had a sufficient portion size, I decided to portion the mash potatoes with a large ice cream scoop. The method worked so well, I decided to use it whenever I would serve mashed potatoes at get togethers.
