Hormel Pepperoni Breakfast Parfait

I have to admit I’m a little salty about the privilege of having Thanksgiving dinner at my house not being passed down to me yet. To celebrate my saltiness, I’m sharing one of the pepperoni recipe ideas I would have made if I’d had been given the honor of hosting this year’s dinner. 

We have Thanksgiving dinner at my in-laws 
E-V-E-R-Y 
S-I-N-G-L-E 
Y-E-A-R 
for the last 13 years. 

If it were at my house this year, my plan was to make Pepperoni Breakfast Parfaits because it seems every year, we end up starving while waiting for the Thanksgiving dinner to finish cooking. Had Thanksgiving dinner been at my house, each guest would have feasted on these delicious parfaits until the food was cooked.

My Pepperoni Breakfast Parfait recipe is super easy to duplicate. It’s basically your traditional eggs, grits and me at breakfast, only in smaller portions. I bought all of my ingredients at Walmart plus saved some coin using this $1.00 on the purchase of any two (2) HORMEL® Pepperoni packages coupon.


  • 1 cup of cooked grits
  • 1 cup of scrambled eggs
  • Hormel Pepperoni minis
  • shredded Mozzarella cheese

To begin, add a layer of grits to the bottom of your dish. I’m using mini tasting dishes, but this could easily be made in something as large as a casserole dish. 
Next, you’ll add your eggs. Just eyeball the amount, but leave enough space to add the pepperoni and shredded mozzarella cheese.

For this step I alternated adding the cheese first and then the pepperoni, but I ended up making the third layer pepperoni.  

You could just as easily enjoy the parfait at this point if cheese is not your thing. I mean, really!?!

It already looks yummy enough to eat as is, but I love cheese, plus I felt like, I’d need to heat these just a bit before serving.

Having the cheese as the final layer, melted over the pepperoni just seemed more appealing to me. It felt like it would be the glue to attach the Hormel Pepperoni minis to the layer of eggs.

Since my kids were heading to my in-laws the day before Thanksgiving, I decided to surprise them with my delicious parfaits.

Of course, they loved them, because they love everything I make them.

  1. Yum! I would definitely want to spend Thanksgiving dinner at your house. As a kid, I was always starving for the big meal as we waited at relatives, so I completely understand. #client
