Chicken and Dumpling Casserole | 30 Minute Recipe

South Carolina has some of the most breathtaking fall views you’d every want to see. Right now the landscape is dressed in the most beautiful golden yellows, burnt oranges and greens. The grass is covered with leaves and just about, every one of my neighbors doorsteps are adorned with pumpkins and potted mums. 
We’re in that spring slash fall weather phase here in the South where it’s comfortably warm during the day, but cold at night. I made the mistake of going outdoors without a jacket and ended up with a cold. It started with a cough and sniffle Tuesday night and by Thursday morning I was on my way to Walmart to pick up some comfort food and cold medicine.

I wanted soup and dumplings but didn’t feel up to cooking it from scratch. So I bought a few cans of Progresso Rich & Hearty Chicken & Homestyle Noodles soup at Walmart and only made the dumplings from scratch. Walmart had a big display of Progresso soup on the end-cap so I was able to skip searching the whole aisle.

I like using Progresso soup because of the quality ingredients. Their all white meat chicken is antibiotic free, making this soup a great substitution for a quick casserole. 
My semi homemade Chicken and Dumpling Casserole only requires a handful of ingredients and is ready in under 30 minutes.


Chicken and Dumpling Casserole
servings 1 prep: 10 minutes cook time: 15
Ingredients
1 Progresso Rich & Hearty Chicken & Homestyle Noodles soup (drained)
Juice from the soup
1/4 cup of flour
1 tablespoon of baking powder
pinch of salt
1/2 teaspoon of dried basil
pinch of ground black pepper
Instructions
First I drained the can of Progresso Rich & Hearty Chicken & Homestyle Noodles soup and reserved the juice in a bowl. Then I dumped the soup into a single serve casserole dish.
Then I mixed all of the dry ingredients, then spooned in the juice from the soup a tablespoon at a time until the dumpling dough was soft like play-doh.
Next I poured the remaining soup juice into the casserole dish, then divided the dimpling dough in fourths and placed them atop the soup.
I baked the casserole on 395 degrees for 15 minutes until the dumplings were brown and the soup thickened.

I love how the dumplings are soft on the bottom and crusty on top. The two textures pair perfectly in this hearty soup casserole.

After eating, taking cold medicine and resting I felt much better.

  9. Wow! I love having an easier recipe for a loved dish. Sometimes you're just not up for making every step. That's how it is with wedding soup. My family always made it from scratch, but when I'm sick I take a shortcut and it still tastes yummy! 🙂
