Every summer babe and I spend two kid-free weeks together while the kids are with their grandparents. When we drop them off and drive away, our dating begins. We always plan some fun and romantic way to connect.
We did a few fun things, but my favorite was cooking together. We used this week to really explore in the kitchen, making new dishes and desserts.
Using blackberries for color and flavor, I created a sweet and slightly tart glaze for the cupcakes which went perfect with the ice cream. Making my own glaze I get to control the ingredients. In my glaze I use real butter and fresh berries which adds to the sweet and creamy taste.
This glaze is fairly easy to make, plus I’m going walk you step by step through the process.
Use blackberries for color and flavor, to create this sweet and slightly tart glaze for cupcakes, donuts or cake. INGREDIENTS
3 cups of powdered sugar
1/4 cups of butter
1-1/2 teaspoons of vanilla
1 tablespoon of milk
1/2 cup of fresh blackberries
1/4 cup of water
1. Add the blackberries and 1/4 cup of water to a medium, microwaveable bowl. Microwave on high for 1 minute. Remove and stir the berries. Microwave on high another 3 minutes. Let the berries cool and strain them to remove pulp.
2. In a bowl, mix the powdered sugar and butter with an electric mixer on low speed. Add in the vanilla, milk and mix until the icing is smooth, creamy and spreadable.
3. Now, beat in berry syrup, a few drops at a time until you get a pretty pink color. If the glaze thins out to much add a little bit more powdered sugar.
4. Now, use the glaze as a topping for cupcakes, donuts or cake. You can dip dessert into the glaze or drizzle it over top. Set the dessert in the fridge for about thirty minutes until it firms up.
