I spontaneously made this 5 Minute Fruit and Nut Oat Bar recipe and decided to share the steps in real time on my Instagram stories and Instagram T.V. channel. I was blown away by the views and feedback so I knew I needed to share it here on the blog as well.

Anyway…I made these 5 Minute Fruit and Nut Oat Bars because I was hungry and craving a snack. I’ve been eating as clean as possible in a house where my eating habits are viewed as weird. I’ve been eating mostly vegetables, which is amazing, but requires more frequent eating since they digest so quickly.
I knew I had some basic pantry staples I could use to make a small batch of oat bars, so I literally grabbed the following ingredients, threw them in my food processor and was done in a few minutes.
- dried dates
- dried cranberries
- pepitas (dried seeds -pumpkin, squash, sunflower, etc.)
- natural peanut butter
- coconut oil
The size and power of my Ninja Kitchen System processor make this recipe easy to measure, chop, mix and clean up. The processor cup makes holds just the right amount to make a quick personalized batch or enough for four people. The batch I made up was the right amount to spread out for my weekly snack.
The fiber and dried fruit in these bars work to not only add flavor, but also aid in digestion. There’s no added sugar in this recipe, just the sweetness from the peanut butter and dried fruit, so the bars have just the right amount of sweetness. Being able to control the ingredients and also the amount of sweetness is one reason I like making these at home. Another is because of how easy they are to make. Having a simple recipe like this one, lets me experiment with the ingredients whenever I want and add more or less of each every time I make this.
The ingredients mix up in 1 to 2 minutes using the Ninja Kitchen System processor and need just 30 minutes in the freezer to set. Once the bars are done, they can be stored in the refrigerator in an airtight container for 7 to 10 days.
