Publix is one of my favorite grocery stores to shop at for weekly meal prepping. They have a unique variety of produce that keeps my meals exciting, but also an extensive line of products in the aisles that make my meals extra special. Products with fun textures like in the Epic Pork Rinds, pork skins raised without antibiotics, the flavor variety of Lily’s Chocolate Bars sweetened with stevia, the familiar ingredients in the Kodiak Cakes, crafted with 100% whole grains, or Simple Mills Nutty Banana Bread Soft Baked Bars with only whole food ingredient to make creating lunch an adventure.
When planning my meals ahead, I pick entrees that are best eaten cold or that taste great reheated. Pastas, salads, veggies and legumes are my go-to’s. They can be used to create a light or hearty dish depending on what I put in them. For pastas, I love going cold with those. Having my meals prepped ahead of time helps me stay on track with the wellness goals and takes away the daily burden of thinking about what to eat. The entrees are all vegetarian-based and when paired with the snacks I got at Publix will make lunch for me an adventure this week.
